PRODUCT DESCRIPTION
Tart (Montmorency) Cherry Juice Concentrate is prepared
from clean, sound fruit which has been washed and sorted prior
to processing. Before juice extraction, the cherries are mashed
and then depectinized to control viscosity. The cherry juice
is then extracted from the fruit. Next, the juice undergoes state
of the art microfiltration assuring a product of brilliant clarity.
This clarified juice is then concentrated at low temperatures
utilizing a multi-stage vacuum evaporator. The resulting 68°
brix concentrate is immediately chilled and packaged as specified.
The Tart Cherry Juice Concentrate is processed according to good
manufacturing practices and is in complete compliance with the
Federal Food, Drug and Cosmetic Act.

*These tests are conducted at 10° brix reconstituted.
Color is tested with a Spectronic 21 using a 1/2" O.D. round
tube [color @ 520 Nanometers (nm)]. Turbidity is measured in
Nephelometric Turbidity units (NTU) using a Hach model 18900 Ratio
TM Turbidimeter.
**Analyzed at Full Strength
***The brown ratio is determined either at single
strength or full strength by measuring the color in the red spectrum
(520 nm) versus the amber spectrum (430 nm).
PRODUCT QUALITY
Flavor and Aroma: 100% Pure Tart (Montmorency) Cherry
Juice Concentrate has been processed to preserve, as much as possible,
the original quality of the natural fruit. The resulting product,
when diluted to single strength, shall be clean in flavor and
color, and free from burnt, caramelized, fermented and other off
flavors.
Preservatives and Foreign Material: The juice shall
be free of. preservatives and foreign material.
PACKAGING
100% Pure Tart (Montmorency) Cherry Juice Concentrate
is packed in bulk (rail or truck) tankers or in 52 gallon net,
double 4 mil poly lined, reconditioned, open top (FDA approved)
metal or plastic drums. Five gallon plastic pails can be made
available on special order.
LABELING
Each label to contain producer's name, address, lot
number/date code, gross weight, net weight, tare weight and a
product description.
KOSHER
This product is certified Kosher by a member of the
Rabbinical Council of America.
STORAGE
All product should be stored at 0° F or cooler. Color
reversion (darkening) may be expected with prolonged storage.
Six months maximum storage is recommended without appreciable
color reversion.
