CONFECTION APPLICATIONS Vanilla is a versatile flavor ingredient for a variety of confection products. It is used in many low-cooked products, such as cream candies, fudges, and caramels, as a stand-alone flavor ingredient or to accentuate other flavors. It is also an important flavoring component in chocolates, where it helps to round out and mask typical bitter notes. Confectioners producing high-quality, high-value products typically choose natural vanilla extract for their products. Manufacturers producing lower value products typically will choose artificial vanilla flavors or natural vanilla extract supplemented with vanillin, an artificial, vanilla-like flavor component. Artificial vanilla flavors offer cost effective options to natural extracts and can also be formulated to be less volatile at high heat temperatures. |
