PRODUCT DESCRIPTION
The product is obtained by clarifying and concentrating
the juice of Concord Grapes. No water, sugar or preservatives
will be added to the product. The juice shall be clarified with
pectic enzymes to remove suspended particles. The juice shall
be detartrated and settled prior to shipment.

Variety: 100% Pure Concord Grape (Labrusca Species)
Brix: 68° +/- 0.5°
Titratable Acidity: 2.0 - 3.8% w/w (as tartaric)
B/A Ratio: 18 - 34
Tartrates: 1% Maximum
pH: 3.0 - 3.6
Color: 520 nm: 0.250 minimum, Ratio 520 nm / 430 nm = 1.3 min. (5 ml sample diluted to 100 ml with Mcllvaine's buffer)
Flavor: Fresh, fully mature, full-bodied Concord flavor, free of disease, insect, mold, rot and other foreign material.
Essence: 150 Fold - returned or separate (as requested)
Total Plate Count: Less than 100 colonies/gm
Mold: Less than 10 colonies/gm
Yeast: Less than 100 colonies/gm
PACKAGING
The container most frequently used is sound, adequately
sealed, open head steel drums, free from dirt, foreign matter
or adulterating substances. The product is placed within double
poly liners as an additional safeguard against contamination.
Each container will be properly and clearly labeled,
indicating the name and address of the manufacturer, net contents,
lot number, degree brix, essence separate or returned and the
ingredient name "Concord Grape Juice".
SHIPPING
Deliveries shall comply in every respect with the
Federal Food, Drug and Cosmetic Act, state laws and the requirements
given in this specification.
To be received in first class condition, transportation
equipment which has been thoroughly cleaned to prevent any possible
contamination of product or its containers should be used. The
product will be shipped in such a way that the temperature will
be at ambient temperatures unless specifically specified by customer
instructions.
STORAGE
Product should be stored before and after shipment
at 50-60° Fahrenheit.
