PRODUCT DESCRIPTION

Apple Juice Concentrate, Type I, is prepared from clean, sound fruit which has been washed and sorted prior to processing. Prior to juice extraction, apples are mashed and then depectinized to control viscosity. The juice undergoes state of the art microfiltration assuring a product of brilliant clarity. The filtered depectinized juice is concentrated through the latest, multi-stage, low temperature vacuum concentration process to provide the highest quality product available. The resulting 70° brix concentrate is immediately chilled and packaged as specified. The Apple Juice Concentrate is processed according to good manufacturing practices and is in complete compliance with the Federal Food, Drug and Cosmetic Act.

STANDARDS

Brix: 70.0° - 71.0° (Minimum 69.9°)

*pH Range: 3.2 - 4.2 (Maximum 4.4)

*Color (Photometric at 440 nm): 35%-85% Transmittance (Minimum 20%)

*Haze (Photometric at 625 nm): 90%-99% Transmittance

*Turbidity (Ratio Turbidimeter): Target Less Than 2 NTU (Maximum 5 NTU)

*Acid (w/v): 0.23% - 0.59% As Malic Acid (Minimum 0.20%)

**Acid (w/w): 1.3% - 3.3% As Malic Acid (Minimum 1.1%)

**Yeast and Mold: Less Than 500 cfu per gram

**Aerobic Plate Count: Less Than 500 cfu per gram

Mycotoxins: Irreducible Minimum

*These tests are conducted at 12° brix reconstituted. Haze and color are tested with a Hach DR 3000 Spectrophotometer with a 1 cm path length flow cell [color @ 440 Nanometers (nm); Haze @ 625 Nanometers (nm)] . Turbidity is measured in Nephelometric Turbidity units (NTU) using a Hach Model 18900 RatioTM Turbidimeter.

All brix tests are performed using an Atago DBX-85 Digital Autorefractometer (an Abbe Digital Bench Refractometer is used as a cross-check.)

PRODUCT QUALITY

Flavor and Aroma: Apple Juice Concentrate, Type I, has been processed to preserve, as much as possible, the original quality of the natural fruit. The resulting product, when diluted to single strength, shall be typical of apple; clean and free from burnt, caramelized, fermented or other off flavors.

Preservatives and Foreign Material: The juice shall be free of preservatives and foreign material.

PACKAGING

Apple Juice Concentrate, Type 1, is packed in bulk (rail or truck) tankers or in 52 gallon net, double 4 mil poly lined, reconditioned, open top (FDA approved) metal or plastic drums. Aseptic 52 gallon or 6 gallon net fill packaging is also available.

LABELING

Each label to contain producer's name, address, lot number/date code, gross weight, net weight, tare weight and a product description.

ESSENCE

150 fold apple essence to be recovered, packed and sold separately in 50 gallon net, high density poly-carbonate bung type drums.

STORAGE

All product should be stored at 45° F or less. Color reversion (darkening) may be expected with prolonged storage. Six months maximum storage is recommended without appreciable color reversion.
